We can’t take credit for this pork loin recipe but couldn’t resist the simplicity of making or the hundreds of positive reviews. Moist, flavourful, and just four simple ingredients make this recipe a winner.
Prep time: 5 mins Cook Time: 1 hour Chill/Marinating time: 2 hours or overnight
Ingredients
- 2 tablespoons steak seasoning rub
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- 2 pounds boneless pork loin roast
Directions
- Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade into the bag; coating well. Squeeze out air and seal bag; marinate 2 hours to overnight.
- Preheat oven to 350°F.
- Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145°F, about 1 hour. Let the roast rest for 10 minutes before slicing and serving.
NOTE: This recipe works equally well for the Slow Cooker. Place marinated roast and remaining marinade in the cooker and cook 4 hours on High or 6-8 hours on Low. When done, you’ll have pork that melts in your mouth. Perfect for pulled-pork sandwiches!

Raining? Cold? Well, put on a sweater and get out the umbrella! This is one spicy, flavourful marinade that’s worth heading outside to the grill for, regardless of the weather!
Makes: 4 servings

Ingredients
- 3 tablespoons olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- cayenne pepper to taste
- salt and freshly ground black pepper to taste
- 1 lb. boneless/skinless chicken breasts – cut into 1-1/2 inch pieces
- skewers
Directions
1. In a small bowl, whisk together the olive oil, vinegar, and lime juice. Add chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper.
2. Place the chicken in a shallow baking dish with the sauce (or use a Ziploc plastic bag), and coat chicken thoroughly with the marinade. Cover, and marinate in the refrigerator at least 1 hour.
3. Thread chicken onto skewers, and discard marinade.
4. Preheat the grill on medium-high setting. Lightly oil the grill grate to prevent sticking. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.
Optional: Alternate chicken pieces with vegetables of choice on skewers.

Tangy lemon pudding topped with meringue, this dessert is baked in glass cups, or even mason jars but tastes just like the Lemon Meringue Pie you grew up with.

Ingredients
Pudding Pie:
4.3 oz. Jell-O Lemon Cook & Serve Mix
1/2 cup water
3 beaten egg yolks, reserve egg whites for meringue
Stir. Then add
2 1/2 cups water
Meringue:
3 egg whites
1/3 cup sugar
Directions
- Bring pudding pie ingredients to full boil on medium heat. Remove from heat, pudding will become firm. Stir constantly. Cool five minutes before filling oven-safe cups or jars.
- For meringue: Beat egg whites with mixer until foamy, and slowly add sugar until hard peaks forms. Spread over lemon pie filling.
- Place cups on a baking sheet. Bake 350°F or until meringue is lightly browned. Cool at room temp. for 4 hours, then refrigerate.
Tip: For a more authentic lemon meringue pie dessert, if you desire you can add a layer of graham cracker crumb crust to the bottom of baking cups before adding lemon pie filling.
Combine one package of graham crackers (crumbled) with 1/3 cup sugar and 4 tbsp. of softened butter. Press into bottom of baking cups or jars and bake at 350°F for 10 minutes. Remove from oven and cool for about 10 minutes, then continue with pie and meringue steps.

Sweet, ripe strawberries with honey-flavored goat cheese on a toasted baguette – a simple but tasty appetizer or dessert sure to surprise guests.

Ingredients
3 cups fresh, ripe strawberries
1 baguette, thinly sliced into 16-20 slices
6 ounces soft goat cheese
2 tablespoons honey (or local Bermuda honey if available)
Directions
– Preheat oven to 350°F. Toast baguette slices in oven for 10 minutes or until crisp. Cool.
– Using a small paring knife hull strawberries. Slice each strawberry into several thin slices holding strawberry intact so that strawberry may be fanned out when complete.
– Stir goat cheese and honey together in a small bowl; spread about 1 tablespoon onto each bread slice.
– Place strawberries on toasted baguette slice fanning strawberry over cheese. Repeat with remaining strawberries. Dust with powdered sugar if desired.
NOTE: Plan to make 30 minutes before serving.

Plump, sweet strawberries are in season. Instead of using these favourite springtime fruits for dessert, try this sweet and savoury Italian risotto recipe from Academia Barilla. Strawberry Risotto is traditionally served as a first course appetizer.

6 cups water
1 onion, small
1 stalk celery
1 carrot, small
2 ½ oz butter
12 oz Carnaroli rice (or Arborio rice)
½ cup sparkling white wine
8 oz strawberries
salt to taste
1 ½ oz grated Parmigiano Reggiano cheese
Preparation:
Prepare a vegetable broth:
Wash and peel the carrot, celery and half an onion. Place them in a pot and cover with cold water. Place on the heat and bring to a boil. Cook for 20 to 30 minutes from the boil. Season with salt only at the end of cooking.
Once the broth is ready, prepare the risotto:
Carefully wash the strawberries. Remove the leaves and dice all but 2 or 3 berries, which you should leave whole for the garnish.
Melt 1/3 of the butter in a pot over medium heat. Then add the other half onion finely chopped and stir. Once the onion is golden, but before it browns, add the rice. Stir and toast the rice until it absorbs the butter and is almost transparent.
Add the wine to the pot and stir. Once the wine has almost completely evaporates, begin to add the broth a couple ladlefuls at a time. Wait for the broth to almost completely evaporate before adding more broth.
After 12 or 13 minutes of cooking the risotto, add the chopped strawberries. Stir and continue cooking by adding more broth until done. The rice should need another 4 or 5 minutes.
Taste the rice for flavor and doneness. If necessary, adjust the salt. As soon as the rice is al dente, remove it from the heat. Mount the rice by stirring in the grated Parmigiano Reggiano and the remaining butter.
To plate the risotto, try garnishing it with finely diced or sliced strawberries.

These lusciously sweet and moist coconut cookies are a heavenly mouthful and fancy enough for tea time with the ladies. Better yet, the recipe doesn’t call for flour so they’re also perfect gluten-free treats.
Makes: Approx. 20-22 cookies Prep. Time: 10 min Cook Time: 25 min
Ingredients
14 ounces sweetened shredded coconut
14 ounces sweetened condensed milk
1 teaspoon pure vanilla extract
2 extra-large egg whites, warmed to room temperature
1/4 teaspoon salt
Directions:
1. Preheat the oven to 325°F.
2. In a large bowl, combine the coconut, condensed milk, and vanilla. In a separate bowl, mix the egg whites and salt with an electric mixture on high speed until medium-firm peaks are formed. Fold the egg whites gently into the coconut mixture.
3. Using a large spoon, drop approximately two teaspoons of the batter onto sheet pans lined with parchment paper. Leave mounded. Bake for 25 to 30 minutes, until golden brown. Cool and serve.
