Naturally sweetened with applesauce instead sugar, and combined with your favourite muesli mix and spices, these mini muffins are healthy little snacks to get your day going in the right direction. Eat for breakfast, pack them in your child’s lunch box, or serve as an afternoon snack. We like putting them on wooden sticks and serving artfully for afternoon tea alongside glasses of ice cold lemonade, but these would also be great for bake sales or a clever, and healthy alternative Halloween treat. (Makes about 8-10 muffins)
Ingredients
- 1 cup applesauce
- 4 eggs
- 1 teaspoon vanilla extract
- 2 teaspoon cinnamon
- 1 1/2 teaspoons mixed spice
- 1/2 teaspoon ground ginger, optional
- 1 teaspoon baking powder
- 3 cups muesli
Directions
- Preheat oven to 350ºF and line 2 muffin sheets with paper liners.
- In a bowl, mix together the apple sauce, eggs and vanilla. Add the cinnamon, mixed spice, ginger, baking powder and muesli; stir until mixed together well. (more…)

We couldn’t resist sharing this cute idea! It’s really easy to do, and a great project for kids and adults alike. Apart from making an awesome display for the table, the tortillas are neatly packaged up. Perfect for parties!
You can find an array of clever ideas for decorating clothes pins on the web – from airplanes and dragonflies to animals, fish and fairies. We didn’t see any Gombeys but we’ll bet there’s a few crafty Bermudians who can create a masterful clothes pin replica. Explore and have fun creating today!
You will need:
– cardboard rolls (or you can roll a piece of cardboard into a tube shape)
– heavy solid or patterned wrapping paper
– wooden clothes pins
– paint
– additional decorations of your choice e.g. magnets, wooden cut-outs, buttons, pom poms, fabric, cute erasers or magnets, etc.
– glue (or double-sided tape)
– scissors
– flour tortillas
– fillings of your choice – turkey, peppers, lettuce, cucumber, etc.
Directions:
- Cut a piece of wrapping paper to fit around cardboard tube leaving an inch all around to overlap and tuck into top and bottom of tube. Use a little glue or double-sided tape to close the seam together on the outside of the tube (the tucked in paper should stay in place but you could use a few dabs of glue to secure if necessary).
- Paint the clothes pins with any design you like and allow to dry completely.
- Adhere any additional decorations to the clothes pins with glue.
- Fill a flour tortilla with fixings of your choice, roll, and tuck into cardboard tubes. Clip on the clothes pin, and serve up the fun!

Pulled Pork
Ingredients
1 pork butt
1 cup seasoning mix (paprika, onion powder, salt and pepper)
Directions
Season pork and then wrap in oven-safe plastic and foil (double the foil) cook at 300°F for 4 hours. Wait 30 minutes after removing from oven and then pull apart with fork or hands.
Coleslaw
Ingredients
1 cup cabbage, shredded
1/4 cup carrots, shredded
1/4 mayonnaise
2 tbsp vinegar
2 tbsp sugar
2 tbsp Dijon mustard
1 tbsp hot sauce
Directions
Mix mayo, mustard, vinegar, sugar and hot sauce together. Add cabbage and carrots and mix together well.

Herb Crusted Sea Bass
Ingredients

- 3 to 4 Chilean Sea Bass fillets
- 1 loaf white bread or Brioche
- 80 ml olive oil
- 1/4 cup oats
- 2 heads parsley
- 1/4 cup chopped tarragon
- Salt and freshly ground black pepper
Directions
- Remove all crust from bread. Chop herbs with a very sharp knife until very fine. Using a food processor pulse oats until fine. Add the bread and continue to pulse until fine. Add chopped herbs, season with salt and pepper and continue to blend slowly. Add olive oil slowly – just enough to lightly moisten, this will ensure the herbs do not oxidize. Pour mixture onto a baking sheet or plate.
- Season the fish fillets with salt and pepper and dredge in the herb mixture, covering both sides. (more…)

The combination of cucumber and lemons may sound strange and unappetizing but, take it from us, this drink is unbelievably refreshing and delicious. Also referred to as Limonada con Pepino, this Mexican inspired drink is a common cooler in the summer months. Mexico is known for its aguas frescas, “cold waters” made from simple, fresh ingredients – fruits or vegetables, water, and sugar. Perfect for the hot, dog days of summer!
Total time: 5 minutes Makes 4 servings
Ingredients
2 English cucumbers
1 cup fresh lemon juice
3/4 cup sugar
4 cups water
Directions
1. Peel and chop the cucumbers.
2. Place cucumbers in blender with water and sugar and blend until very smooth.
3. Add lemon juice and blend again.
4. Pour into glasses, garnish with cucumber and lemon slices and enjoy!
