Naturally sweetened with applesauce instead sugar, and combined with your favourite muesli mix and spices, these mini muffins are healthy little snacks to get your day going in the right direction. Eat for breakfast, pack them in your child’s lunch box, or serve as an afternoon snack. We like putting them on wooden sticks and serving artfully for afternoon tea alongside glasses of ice cold lemonade, but these would also be great for bake sales or a clever, and healthy alternative Halloween treat.   (Makes about 8-10 muffins)

Ingredients

  • 1 cup applesauce
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoon cinnamon
  • 1 1/2 teaspoons mixed spice
  • 1/2 teaspoon ground ginger, optional
  • 1 teaspoon baking powder
  • 3 cups muesli

Directions

  1. Preheat oven to 350ºF and line 2 muffin sheets with paper liners.
  2. In a bowl, mix together the apple sauce, eggs and vanilla. Add the cinnamon, mixed spice, ginger, baking powder and muesli; stir until mixed together well.
  3. Spoon the mixture into paper liners and bake in the oven for about 20-30 minutes or until a toothpick inserted in the middle of the muffins comes out clean.
  4. Let cool for 3-4 minutes and then remove from muffin sheet.
  5. Insert wooden sticks, if desired, and serve.

Variations:
It’s easy to vary this recipe. For example, add fruits and nuts such as blueberries, cranberries or banana, and/or pecans or almonds. Or, substitute 3 cups of oats for the muesli mix. Have fun experimenting…. It’s delicious!
