The combination of cucumber and lemons may sound strange and unappetizing but, take it from us, this drink is unbelievably refreshing and delicious. Also referred to as Limonada con Pepino, this Mexican inspired drink is a common cooler in the summer months. Mexico is known for its aguas frescas, “cold waters” made from simple, fresh ingredients – fruits or vegetables, water, and sugar. Perfect for the hot, dog days of summer!

Total time: 5 minutes   Makes 4 servings

Ingredients
2 English cucumbers
1 cup fresh lemon juice
3/4 cup sugar
4 cups water

Directions
1. Peel and chop the cucumbers.
2. Place cucumbers in blender with water and sugar and blend until very smooth.
3. Add lemon juice and blend again.
4. Pour into glasses, garnish with cucumber and lemon slices and enjoy!
