Sweet morsels of delicious Oreo cookies embedded in rich chocolate cupcakes, and topped with a cream cheese frosting. Plus, there’s a hidden surprise at the bottom! Can you say OMG! so good!?
Makes: 24 cupcakes Total time: 25-30 minutes plus cooling time
Ingredients
- 1 pkg (14.3 oz) Oreo Creme Sandwich Cookies (regular)
- 1 pkg Devil’s Food Cake Mix
- 1 pkg (8 oz) cream cheese, softened
- 1/2 cup butter, softened
- 3 3/4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 pkg (14.3 oz) Oreo Creme Sandwich Cookies (or Mini Oreos), for decoration, optional (you won’t need all the cookies)
- cupcake paper liners
Directions
- Preheat oven to 350°F. Place cupcake liners in cupcake pans.
- Mix cake mix according to directions on package. Set aside.
- Place one Oreo Cookie in the bottom of each cupcake liner.
- Coarsely chop half of the remaining cookies; fold gently into cake mix. Fill cupcake liners with the mix.
- Bake for 15 minutes, or as directed on cake mix package (cupcakes are done when a toothpick inserted into center comes out clean).
For the frosting: In a medium size bowl, cream together butter and cream cheese. Add vanilla extract. Slowly add powdered sugar and blend well. Place remaining Oreo cookies into a food processor and pulse until fine. Add to cream mixture, blending well.
Note: if frosting is too runny add a little more powdered sugar slowly, blending after each addition to test consistency. After cupcakes are completely cool, spread or pipe frosting onto cupcakes. Decorate with additional Oreo cookies (regular or mini size), if desired. You can also decorate the base of the frosting with a little finely crushed Oreo cookie.
If cream cheese frosting isn’t your thing, you can always make a cookies and butter cream frosting: Mix together 1 cup unsalted butter with 3-3 1/2 cups confectioners’ sugar. Add coarsely chopped Oreo cookies (use about 24 cookies), and gently blend together.

Easy to prepare, Ham & Cheese Roll-ups make an elegant appetizer. Use a good quality ham for the tastiest results.
Ingredients
- 1/2 lb deli sliced ham (smoked, rosemary, Black Forest)
- 1 (8 oz pkg.) cream cheese, softened
- 3 green onions, or scallions, chopped finely – reserve green leaves for tying rolls
- 1/2 small red bell pepper, chopped finely
Directions
- In a small bowl, mix together softened cream cheese, onions, and red bell pepper.
- Spread on ham slices.
- Roll each slice up jelly-roll style.
- Tie each roll with a piece of the reserved green leaves of the scallions.
- Arrange on a serving plate. Refrigerate until ready to serve. Enjoy!

Summer is officially here and for us in Bermuda, that means months of long, hot, humid days with temperatures in the mid-80s for the majority of the day. Summer is the season for fun, but you must also make sure you focus on your health as well.
Dehydration is very common in the summer months when we tend to be very busy and forget to hydrate. The combination of hot sun and lack of water can be dangerous and even deadly.
So what exactly is dehydration? There are several types and levels of dehydration. The simple definition of dehydration is the excessive loss of body fluids in which the body needs more fluids than are being input to function normally. The body fluids that are lost are either one or the other of the following or a combination of the two – water loss and electrolyte loss.
Electrolytes are substances that become ions in a solution and are able to conduct electricity. They are present in the human body and essential for normal functioning of organs and cells. There are four main types of electrolytes found in the body – sodium, potassium, chloride and bicarbonate.
When it comes to fluid loss, there are three main types of dehydration – hypotonic or hyponatremic, hypertonic or hypernatremic and isotonic or isonatremic. Hypotonic or hyponatremic is the loss of electrolytes, mostly sodium. Hypertonic or hypernatremic is the loss of water, and finally isotonic or isonatremic is the loss of both water and electrolytes.

Papillote is a method of cooking whereby food is baked inside a sealed wrapping of parchment paper or aluminum foil. As the food is baking it releases steam, gently cooking the enclosed food, trapping in flavour.
Preparation/Cook time: Approx 45 minutes Serves: 4

Red Snapper has a fine textured, mild white meat. A healthy food, Red Snapper can be enjoyed baked, broiled, grilled or fried.
Ingredients
- 4 (4 oz.) filets of Red Snapper
- Parchment paper or aluminum foil
- 4 shallots, chopped
- 1 small red bell pepper, chopped
- Capers, to taste
- 4 garlic cloves (minced)
- 1 cup white wine
- 4 sprigs of fresh thyme
- 8 Tbsp butter
- 8 spears of broccoli
- Salt and Pepper
Directions
- Cut 4 pieces of parchment paper or foil into a rectangular shape (approx 1.5 ft long and 1.5 ft wide) and brush edges with oil.
- Arrange a filet of fish in the centre of one half of each parchment. Season the fish well with salt and pepper.
- In a small pan, sauté the chopped shallots, red pepper, capers and garlic for 1 min. Spoon equal amounts on top of each fish filet. Place the fresh thyme sprigs on each fish filet followed by a good 1-2 Tbsp of butter. Pour the wine over the fish – 1/4 cup on each. Arrange the spears of broccoli around each filet of fish – 2 per packet.
- Carefully fold the other half of parchment over the fish and vegetables. Seal the parchment package by folding in the edges a few times over to create a nice package.
- Bake the parchment packages on a tray in a preheated 400°F oven for 8-12 mins.
- Remove from oven, open the package carefully (released steam is hot!) using scissors to open it around the top edges. Spread open flap. Enjoy eating right out of the parchment pouch!
Note: You can also place packets on barbecue grill to cook.
