One of the greatest joys of summer is spending more time in the great outdoors with family and friends. Sunny summer days: the glistering blue sea, the periodical crisp breeze of fresh air and the delightful aroma of a fired up grill. Most will agree that the summer is their favorite season; while others will argue that the excessive heat can be unbearable at times!

This excessive heat leads many to exhaustion, lack of concentration, sleepless nights, irritability, as well as a host of other problems. No worries, I’ve got you covered! Did you know that food and beverages contribute to keeping your body healthy and cool during this beautiful season? “Clean eating”, “conscious eating” or simply choosing the right foods to help in feeling lighter and healthier for the summer can be daunting for some. Some wonder where to begin and find it hard to believe that eating healthy foods can taste so delicious and leave a rewarding feeling of satisfaction and nourishment. One of the essential goals to combating the excessive heat during the summer is staying hydrated. Below is a list of foods to stock up on to stay cool, hydrated and healthy this summer.

Bananas: are great sources of potassium. They are a perfect way to start the day, healthy snack or freeze for cooling banana ice-cream. Potassium helps to regulate bodily fluids that are lost during excessive perspiration. (more…)

Blackened Snapper with Fruit Salsa

Private Chef Tammy Jones shares her recipe for delicious blackened snapper fillets topped with a salsa made from fresh seasonal melons, strawberries, pineapple and cilantro.

Ingredients
4 fillets Snapper (local if you can get it)
Blackened Seasoning Mix
For the Salsa:
1/4 cup Strawberries, diced
1/4 Pineapple, diced
1/4 Cantaloupe melon, diced
1/4 Honeydew melon, diced
1 Tbsp Cilantro, chopped
Juice of one lime
Pinch of salt

Directions
For the Fish
Lightly coat snapper fillets with the blackened seasoning and then place fillets in a large pan over medium heat. Turn fillets after 5 to 7 minutes. Do not worry if the fish has blackened spots on it, the fish is not burnt… it’s just why they call the seasoning blackened! Once turned, place pan in a 300°F preheated oven for 5 minutes to cook through.

New to grocery store apps?  We’ve done a little research and we’ve found three apps that make grocery shopping easier, more efficient, and just plain fun!

Simplify grocery shopping with Out of Milk. If you can’t remember what’s in your pantry, then this app is for you! Create and share lists with family and friends and keep track of what you already have in the pantry. Available for iPhone, Android and PC.

Grocery IQ. Add items to your grocery list by either typing them in or add items with your voice or by scanning items’ barcodes. Yup, just go through your pantry and fridge and scan the barcodes. Fun! Like the aforementioned app, Grocery IQ also syncs your lists with family or friend’s smart devices. Grocery iQ is available for iOS or Android.

Fooducate. Make better, healthier food choices with Fooducate. Scan an item and watch as this app (using a vast database, scientific algorithms, and a grading system developed by dieticians and concerned parents) provides simple, concise explanations as to why an item is healthy or not, while offering alternative healthier choices to the item you scanned. Mini Muesli Muffins

Naturally sweetened with applesauce instead sugar, and combined with your favourite muesli mix and spices, these mini muffins are healthy little snacks to get your day going in the right direction. Eat for breakfast, pack them in your child’s lunch box, or serve as an afternoon snack. We like putting them on wooden sticks and serving artfully for afternoon tea alongside glasses of ice cold lemonade, but these would also be great for bake sales or a clever, and healthy alternative Halloween treat.   (Makes about 8-10 muffins)

Ingredients

  • 1 cup applesauce
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoon cinnamon
  • 1 1/2 teaspoons mixed spice
  • 1/2 teaspoon ground ginger, optional
  • 1 teaspoon baking powder
  • 3 cups muesli

Directions

  1. Preheat oven to 350ºF and line 2 muffin sheets with paper liners.
  2. In a bowl, mix together the apple sauce, eggs and vanilla. Add the cinnamon, mixed spice, ginger, baking powder and muesli; stir until mixed together well. (more…)

Food Fun with Clothes Pins

We couldn’t resist sharing this cute idea!  It’s really easy to do, and a great project for kids and adults alike. Apart from making an awesome display for the table, the tortillas are neatly packaged up. Perfect for parties!

You can find an array of clever ideas for decorating clothes pins on the web – from airplanes and dragonflies to animals, fish and fairies. We didn’t see any Gombeys but we’ll bet there’s a few crafty Bermudians who can create a masterful clothes pin replica. Explore and have fun creating today!

You will need:
– cardboard rolls (or you can roll a piece of cardboard into a tube shape)
– heavy solid or patterned wrapping paper
– wooden clothes pins
– paint
– additional decorations of your choice e.g. magnets, wooden cut-outs, buttons, pom poms, fabric, cute erasers or magnets, etc.
– glue (or double-sided tape)
– scissors
– flour tortillas
– fillings of your choice – turkey, peppers, lettuce, cucumber, etc.

Directions:

  1. Cut a piece of wrapping paper to fit around cardboard tube leaving an inch all around to overlap and tuck into top and bottom of tube. Use a little glue or double-sided tape to close the seam together on the outside of the tube (the tucked in paper should stay in place but you could use a few dabs of glue to secure if necessary).
  2. Paint the clothes pins with any design you like and allow to dry completely.
  3. Adhere any additional decorations to the clothes pins with glue.
  4. Fill a flour tortilla with fixings of your choice, roll, and tuck into cardboard tubes. Clip on the clothes pin, and serve up the fun!
