Ingredients
- 1lb shrimp, peeled & deveined
- 1-2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 1 bell pepper, sliced into strips
- 1-2 stalks of celery, chopped
- 1 onion, chopped
- 2 tablespoons Thai red curry paste
- 1/2 teaspoon red pepper flakes, or more, to taste
- 2-3 tablespoons fish sauce
- 1 can (13.5 fl oz) coconut milk
- 1 tablespoons brown sugar
- 1 bunch of scallions chopped
- 1/2 cup basil leaves
- oil for wok frying
Directions
In a large wok (or skillet) heat one tablespoon oil. Saute pepper, celery, onion, ginger and garlic; about 1-2 minutes. Add shrimp and saute for another minute. Add red curry paste, brown sugar and red pepper flakes and saute for 3-4 minutes more. Add fish sauce and coconut milk and simmer for another 3-5 minutes until shrimp is cooked (turn pink).
