Chile peppers constitute one of the most important crops on the planet and were first domesticated in Meso-America about ten thousand years ago.

The immense popularity of the Chile pepper may have been stimulated by its anti-bacterial properties and the notion that this special spiciness can gently lower body temperatures through gustatory sweating, both key traits in hot climates. But the flavours are what keep us coming back for more, after ten millennia.
