Earthy, and sweet, these honey and mustard glazed parsnips are a lovely winter side dish.

INGREDIENTS

  • 1 lb. parsnips
  • Olive oil
  • 2 tablespoons honey
  • 2 tablespoons wholegrain mustard
  • Salt and pepper
  • Fresh thyme or parsley, for serving

DIRECTIONS

  1. Preheat the oven to 400ºF.
  2. Scrub and trim the parsnips, halving any larger ones lengthways. Parboil in a pot of boiling salted water for 5 minutes, then drain well.
  3. Mix together the oil, honey, and mustard with a pinch of salt and pepper.
  4. Lay the parsnips in a foil-lined baking pan. Pour the honey mustard sauce over the top. Toss the parsnips in the sauce so they are fully coated.
  5. Roast for 20 minutes, turning the parsnips halfway through cooking time, until golden brown.
  6. Sprinkle roasted parsnips with fresh thyme or parsley just before serving.
