CHIPOTLE BEAN DIP

Full of smokey Southwestern spices and flavours this Bean Dip is a perfect game day appetizer.

INGREDIENTS

  • 1 teaspoon olive oil
  • 1 yellow onion chopped
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • ½ cup salsa
  • 1 7-ounce can corn niblets, drained
  • 4 ounces canned green chiles, undrained
  • 1 teaspoon chipotle paste
  • 15 ounces pinto beans, rinsed and drained
  • ½ cup shredded Pepper jack cheese, optional

DIRECTIONS

  1. Heat oil in a medium skillet. Once oil is hot, add in onion and cook until onion is soft and brown.
  2. Add the smoked paprika, chili powder, salsa, corn niblets, green chiles, and chipotle paste. Stir to combine well. Add the pinto beans and simmer until hot and bubbly.
  3. Serve while hot. Top with Pepper Jack cheese, if desired, and serve with sweet potato chips, tortilla chips, or fresh sliced veggies.
