CHIPOTLE BEAN DIP
Full of smokey Southwestern spices and flavours this Bean Dip is a perfect game day appetizer.
INGREDIENTS
- 1 teaspoon olive oil
- 1 yellow onion chopped
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- ½ cup salsa
- 1 7-ounce can corn niblets, drained
- 4 ounces canned green chiles, undrained
- 1 teaspoon chipotle paste
- 15 ounces pinto beans, rinsed and drained
- ½ cup shredded Pepper jack cheese, optional
DIRECTIONS
- Heat oil in a medium skillet. Once oil is hot, add in onion and cook until onion is soft and brown.
- Add the smoked paprika, chili powder, salsa, corn niblets, green chiles, and chipotle paste. Stir to combine well. Add the pinto beans and simmer until hot and bubbly.
- Serve while hot. Top with Pepper Jack cheese, if desired, and serve with sweet potato chips, tortilla chips, or fresh sliced veggies.
