Most of us automatically associate pasta with Italian food; after all, pasta is the national dish of Italy, where hundreds of varieties are enjoyed daily and have been since the thirteenth century.

While traveling in the Far East, the founder of the Explore Cuisine Company was so impressed by the wide variety of wonderfully unfamiliar pasta he encountered, that he resolved to bring the knowledge back to the West.
