Among the many groups of refugees arriving in North America, from the seventeen-hundreds onward, the Moravian culture, like the Pennsylvania Dutch, settled down and began to work their magic on what would eventually become American cuisine, adding to a cultural mosaic boasting as rich a diversity of flavours and textures as any other nation.

Dewey’s Bakery was founded in North Carolina in nineteen-thirty and created classic, distinctive Moravian bakeware characterized by many as the world’s thinnest cookie.

This month, we’re featuring Dewey’s Bakery Moravian Style Gingerbread Cookie Thins.
