Wholesome whole wheat muffins packed with the healthy goodness of apples, carrots and raisins.
Cooking Time: 20 to 25 minutes
Makes: 12 muffins
Ingredients
1 cup (250 mL) Robin Hood® All Purpose Flour
1 cup (250 mL) Robin Hood® Whole Wheat Flour
1/2 cup (125 mL) granulated sugar
2 tsp (10 mL) baking soda
1 tbsp (15 mL) ground cinnamon
1/2 tsp (2 mL) salt
2 cups (500 mL) peeled and shredded apples (3 medium)
1/2 cup (125 mL) shredded carrots
1/2 cup (125 ml) raisins
1/2 cup (125 ml) chopped walnuts or pecans
1/2 cup (125 mL) shredded coconut (optional)
1/2 cup (125 mL) Crisco® Vegetable Oil
1/4 cup (50 mL) milk
2 tsp (10 mL) vanilla extract
2 eggs, lightly beaten
Preparation
- Heat oven to 350°F (180ºC). Grease or line 12 muffin cups with paper baking cups. Combine flours, sugar, baking soda, cinnamon and salt in a large bowl.
- Add apples, carrots, raisins, walnuts and coconut. Mix well. Add oil, milk, vanilla and eggs. Stir just until moistened. Fill prepared muffin cups 3/4 full.
- Bake for 20-25 minutes or until toothpick inserted in centre comes out clean. Immediately remove from pans. Cool.

Originating in the Nineteenth-century versions of it were shouted in the streets in the week leading up to Good Friday, the Friday before Easter. Yes, Hot Cross Buns are not unique to Bermuda! The National Raisin Company has been around since the late 1960s and is now America’s largest packer of private branded dried fruit products.
When I was a kid my mom would get me to eat raisins daily, for the health benefits. She’d even make peanut butter and raisin sandwiches for our school lunches!
But it was all good; we loved ’em.

Always a favourite with kids this smoothie is loaded with tropical fruit flavour.
Ingredients
3/4 cup DOLE® Pineapple Juice
1 carton (6 oz) strawberry yogurt
1 DOLE Banana(s), sliced
Directions
Combine pineapple juice, yogurt and banana in blender or food processor. Cover; blend until thick and smooth. Serve immediately.
