This easy to make salad is perfect for using as a summer dip, or spread. It’s great on its own or for topping rice cakes, crispbread, and flatbreads.

Ingredients

  • 3 cups chicken breast, cooked and cut into chunks
  • 1/2 cup mayonnaise (or light mayonnaise)
  • 2 tablespoons sour cream
  • 1/4 cup roasted cashews
  • 1/4 cup dried cranberries
  • 1 apple, chopped
  • Salt, to taste
  • Black pepper, to taste

Directions

In a bowl combine the chicken, mayonnaise, sour cream, cashews, dried cranberries, apple, salt, and pepper, and stir to combine. Chill in refrigerator for 30 minutes. Serve with crispbread.
